A Quick Intro

When most people think of bread they only think of the delicious end-product, but there is a fascinating and deep process behind it. Apart from the visible technical complexities of baking, there are innumerable physical and chemical principles underlying the entire process. The baking process can be divided into three basic steps: mixing, rising and proofing and the actual baking, each with it's own set of principles.
