Cooking Sou Vide is not meant to be the end all method of cooking and preparing foods. It is merely another tool that can be used to make some uniquely delicious food items. With a little extra time and consideration to your food you can prepare what some consider near perfect steaks and various other dishes.

There are vast numbers and websites, charts, and posts by people that have used trial and error to come up with the various combinations of time and temperature to produce the best results for all kinds of items. From vegetables to eggs, and almost every cut of meat a butcher can make.

The best site I found for cooking instruction on steak was "The Food Lab's Complete Guide to Sous Vide Steak." If you really want to cook the best steak you cant go wrong goinf to this website. But the thing that really got me interested in sou vide cooking were the videos made by Adam Savage's Tested.
