RADIATION
Radiation
is defined as the transfer of heat energy through empty space. The
interesting thing about radiation is that it works even in a vacuum.
The way heat is transferred is by electromagnetic waves. In an oven,
radiation occurs through infrared radiation.
This radiation causes water molecules to evaporate, causing food to
seem dry and crispy. Other molecules in the food (i.e. sugar, fat,
etc.) absorb these waves, causing them to heat up.
